CAPER LEAVES

Spinosa

Caper is a small, untameable plant that grows in stones, rocks and cliffs. Part of the family of capparaceae, it is native to the Mediterranean and Middle East countries.


In antiquity it was believed to have healing properties, with avid references by the ancient physician Dioscorides.

Greece, with its hot sunny weather and quality of soil is an ideal home to this self-grown bush whose flowers, fruit and leaves are all edible.


"Mani caper leaves" are collected from wild caper that grows among drystone in the family estate. Caper is carefully harvested by hand from the end of spring until mid-summer, and is then put in brine to mature.


Its characteristic vinegary taste and strong flavour is sure to give a unique burst in fresh salads, especially in Greek salad (choriatiki).
