In the storm, the sea is trapped, in the stone cavities (Lumbes) of the rocks and with the help of the sun it evaporates, leaving behind the salt crystals.
In order for the water to be trapped in the cavities of the rock and not to escape back to the sea, the rocks must be such that they retain the water and for this reason this phenomenon does not occur in all areas where there are rocks and storms!





Since ancient times, the hard rocks (quartz-limestone) of shady Mani have been producing excellent quality salt.
The unique type of salt that is also characterized as "White Gold".
The collection of "white gold" in Mani, is a manual, difficult and unique process, which is the largest and most important part of a historical art that tends to be lost.
This is also our art, the art of collecting the special "fleur de sel" salt flower.
Production is always limited, collection is from June to September and packaging is when
we dry it in glass containers carefully.
The salt flower retains a significant percentage of moisture because it has not undergone any chemical or other treatment processing.
It has a natural white color without any bleaching, like common salt, while its distinctive texture is this which gives it the special crystalline form, the soft taste, but also helps to preserve its characteristic elements.
Rich in trace elements, essential for the human body, rich in nutritional value and above all rich in taste, it dissolves faster than common salt and is ideally added to food just before it served.
SERVING SUGGESTIONS:
Ideal in Greek salad, grilled meats just before serving, but also in confectionery in preparations with caramel or milk chocolate.
